Megaman is my favorite series period, so it's not really a fair fight. Of those three I play Metroid the least, so:
Megaman > POWER GAP > POWER GAP > YES A THIRD POWER GAP > Castlevania > Metroid

Mega Man is my personal favorite, namely X style gameplay. Metroid is good too, in a different sort of way, since it is more rewarding for exploration.
I was never a fan of Castlevania personally. The only game I liked was SOTN.

Give Rondo of Blood a try if you ever feel like it. It's tight, well-designed but unforgiving. Like early Classic Mega Man games (and 9 and 10).

The only Mega Man game I'd ever call unforgiving is the first one, and even then its not that bad. 2-11 is pretty forgiving, even 9 and 10 are forgiving enough.

I think Classicvania and Mega Man are on the same level of unforgiving. If you get hit on an edge you're done. There's not many healing items and you have to learn boss patterns, you can't facetank anything.

Also, you cannot deny there's a huge gap in difficulty between 1-3/9-10 and 4-8

Castlevania for challenge and bosses
Megaman for music and weapons, also is the fastest to complete
Metroid for character development. Not sure how they do it but every fucking game has a kino ending
