honestly for your sanity just start with VII and go backwards if you want more, the games treat everyone as if they're new to the series anyways and VII is the most polished
the anime sums up 2 and victory
the first game isn't connected to the rest of the series since it's another dimension
2 is better than 1 but has a stupid system where you have to grind until you get certain items so the next area can unlock and has a notorious genocide ending that fans hated
victory is ok and its system was used for the remakes
just play VII, the fourth and most recent game

It has that stupid thing "you can make difficulty harder, but there are no extra rewards". And if you crank it too high up, it becomes impossible to progress.

Start with Re;birth 1 > 2 > 3 > VII (the OG one, do not play VIIR). After that you can play whatever.
