Finally getting into this series. Bought all 3 games.
Any pro-tips? What build should I go for? Sword and board? And more importantly, do I play online or offline? Heard so many horror stories about getting ganked, and I don't really care about co op or PvP.
Level up anything that you want, creating specific builds is for faggots.
Play online, messages can help you and invasions are pretty weird nowadays

If you want easy mode pick a huge ass sword and heavy ass armor. Don't worry about getting invaded because even if you do by some asshole with over leveled weapons (which you will) there is a cooldown timer on invasions. Play online, summon, invade, do it all.

The best protip is to just go on blind and enjoy it so you have an authentic experience, but I guess getting spoofed information on how to play a game that is supposed to make you learn as you go and learnt he world and explore and absorb it and feel and feel hopeless and alone works too

How hard are these games anyway? I beat Dragon's Dogma + DLC 100% and it didn't feel too hard. Heard DS2 is a bitch, but I'll probably leave it for the last. Currently considering going with 1 > 3 > 2.

id play offline for das1, it's a lot of cheaters now if you ever do get invaded. das2's pvp is the best factor about it so play that online, play 3 online as well. build in 1 doesn't really matter, just pick a weapon you like and dump souls into whatever its requirements are. 40 is the softcap, past 40 you get diminishing returns on scaling. don't bother with armor, it doesn't do much. wear what looks good but make sure you're fast rolling or at least medium rolling. get gud with rolling, you have iframes for a reason. in das2 one of your stats increases roll iframes, level it to like 21 or something (been years since I played 2, look up the caps for that stat to make sure. your rolls are trash at base level in that game) in 3 a lot of mobs have kind of relentless attacks, so quicker weapons are easier but again you can build pretty much whatever for pve. they're not really hard games in that aspect, you can use what you like although some weapons are better than others

Okay, real talk.
Start as Bandit, as soon as you get to Firelink, raise your Strength to 16. Grab the Zweihander from the graveyard next to Firelink. You will be able to wield it in two hands. Pump points into your VIT, END, and STR. Once you hit 24 STR you will be able to wield the Zweihander in one hand, but you'll probably want to keep two-handing it. It's the best newb weapon since the R2 will knock enemies down and it does great damage.
