Lions are something you should have done before Edelgard's to get a new perspective before doing.

He is meant to miss an eye in every route not Edelgard's. He has both of his eyes in her route for some reason.
They were also too lazy to make extra model for his one-eyed version, which can cause funny glitches because he shares the same model as his time-skip model with both eyes from Edelgard's route. So you may get his both eyed model for non-Edelgard's route despite his portrait having an eyepatch, or you may get an eyepatch model for Edelgard's route even though his portrait has both of his eye intact.

I will say that the characters looking samey is true, but that's mainly because of the school uniforms and the fact that they are all available upfront. Once you get past that they don't seem samey anymore.

Church route is kind of even more batshit IMO, but you get an entirely different perspective on the events.

All of the plots are interconnected but instigated by Edelgard's actions. The whole fucking point of the game is that Blyeth is the Enlightened One and whichever path they pick becomes the "right path", and the story changes accordingly.
