16GB is the minimum for PC gaming in 2019. Modern releases will max out 8GB easily, and Windows 10 is a RAM hog compared to 7 and 8.1.

You're not guaranteed to have compatible RAM if you buy more sticks down the road. Even if you buy the same brand, with the same clock speeds you can run into problems trying to run say two different 8 gig sticks. It's unlikely, but RAM manufacturers play loose and fast with their quality.

A lot of sandbox games are memory hogs.
I really like Space Engineers but it's a memory heavy game. To play in multiplayer map with planets enabled and have comfortable fps you need at least 12 gb.
Some maps with a lot of planets eat up to 30 gb of ram.
