Bases are what they start with, growth are % chance that a unit gain +1 in that stat on level up. Basically, higher the number the more the unit is likely to get that stat.
It IS random so sometimes a unit with good growth in a stat get screwed, or a unit whit shitty growth get blessed with luck.

Also, every classes modifies those growth a bit (example, most magic classes increase magic growth but reduce str growth, assasin and swordmaster increase speed growth, Knights increase def and strenght but reduce speed and res, etc)
