I have played through the game to completion 5 times and I never even realise you could turn that shit off.
The combat system has a lot of mechanics, you need all of that and arguably there are other stuff that they could have added to the UI to give you more useful information, like permanent icons for all buffs and debuffs on party drivers, blades and enemies.

I played with them the whole game since specially in the post game I was rotating different Blades into my party a lot.

I blame handheld on it being oversized. You can turn off the skill names / descriptions but it doesn't really fix anything.

Holy shit there would be no space left on the damn screen each blade has 3 innate abilities, you have Aux cores adding potentially 3 more per blade, 6 potentials buffs from pouch items, 3 from equipment bonuses, then you have blade arts, all the buffs from the drivers skill tree, then you have driver/blade/fusion combo buffs + the potential buffs that some driver arts and special arts have like hp regen or granting evasion and then finally you have enemy reactions + damage over time effects that they can inflict.
Being able to see what blade arts you have active and how much longer they will last for and perhaps a visible damage multiplier for when fusion combos are active would be great additions.

yeah, icons for all the buffs sounds nuts, but I do wish there was an easier/quicker way to see what orbs you have on an enemy that didn't involve actually having to look at the shit flying around them

there are a couple of really egregiously terrible ones, and the various art styles mixing together makes things real weird but overall I don't think XB2's designs are all that bad. everyone in the main party except for Rex and Pyra look pretty good, and Nomura's designs for the villains are surprisingly simple and look really nice.
the main issue with the majority of the rares is that they're bland 'cute girl/guy with a gimmick' designs instead of anything creative, not that they're outright terrible

how long are your battles taking, man? the only time things really dragged for me in every fight was in chapter 3, once I got the hang of things regular fights went by real fast
messing with weapons shouldn't be an issue either, you get tons of randomly generated blades of (almost) every weapon type and every element so you can try out whatever
I just wish the game A. gave you the whole battle system from the start instead of taking ages to give you shitty tutorials on every little bit and B. let you unequip the main blades on your first playthrough so you could properly mess around with team composition before the endgame

They weren't taking hours and hours, but they certainly went on longer than I would like for some random mooks in an RPG. Also the way the game gives you weapons is still shit because the weapons vary in ranking and strength.

I don't know where you got the idea that I thought they were taking hours. in my experience, the bad fights with regular mobs in xb2 were the ones that last like 3+ minutes on a enemy that didn't even have reinforcements. reinforcements makes them even worse, I think I spent like 10 minutes fighting wolves once because of that
I'm not denying your experience or saying that you aren't allowed to dislike the game or anything, because I went shit like that too. but you asked why people like the game, so what I'm saying is that I had fun because the 'battles taking forever' part didn't represent anything more than a short segment of my time with xb2 - I figured out how to use and mix the various combos in combat and fights started being enjoyable and taking reasonable amounts of time again. after that whenever I felt especially tired of fighting (old factory, spirit crucible, fuck you) it was because of the number of enemies running around, not the length of the individual fights
