the problem with calling dark souls difficult is that it's no longer difficult by the virtue of the series' difficulty becoming a meme so any newcomers automatically expect bullshit and play more cautiously than they would in any other modern game, which gets rid of 90% of the difficulty

DkS3 has a weird difficulty curve compared to the others. Most are a pushover except for a few like Pontiff, or Aldrich (assuming you're new).
Other than that unironically the hardest parts are the levels themselves. Lothric is a long stretch with lots of encounters and groups of mobs, Irithyll can be annoying with the fire mages, the run up to Dragonslayer and Princes are pretty challanging too.
That is if you're looking to take it slow and pick up stuff and not just run through everything though.
