Dark Souls was a breath of fresh air during a time when companies didn't think making "challenging" games wasn't very fun or profitable and forgoed any sort of difficulty that could make their loyal fans feel alienated from specific genres. From Software said "fuck that" and made a game that challenged players to not just adapt to a haphazardous environment and playstyle, but commit to the hardships and learn from them until victory was assured. People loved the game, it reached popular acclaim, and naturally reassured companies and audiences that difficultly in videogames can not only be fun, but rewarding in and of itself. So yeah, people like to attribute games that are inherently "soulslike" as "soulslike" because it was an influential design choice at the time of it's release

Rogue-lites are games that are randomly generated perma-death games, often with features to make the game easier over time ranging from literal level ups for your character, to powerful item unlocks, or even just the intrinsic "power" of learning the myriad of enemies, patterns, rooms, and items you can encounter within the game.
It's different from a Rogue-like because those games need some sort of RPG connection with more in-depth stats and nerdy shit to dig deep into. Roguelites don't need to be turn-based, Roguelikes generally do. Roguelikes are usually tile-based as a result, and they are much more indepth while Roguelites include even simple games like The Binding Of Isaac or Toejam and Earl.
