Normal is Java, it has the main team on it, Bedrock is a port to a better engine and is the universal version that gets crossplay and all that its a bit behind in updates tho.
Also all the best mods and servers tend to to be on Java.

I started playing again because they finally added an update to imporve villages and villagers, the last update added a bunch of ocean stuff that takes too long to actually be able to interact with.
The update before that was even worse since it was full of a bunch of shit I didn't care about at all.
They never would have lost popularity in the first place if they had more frequent updates with content people actually care about, like cave biomes or cool redstone stuff.

Exactly, this is the only update in many years that actually added stuff that was interesting enough to bring back older players.
My friends and I used to regularly start a new survival world everytime there was a new update, but in the past few updates before the 1.14 update we didn't even bother.

Pretty easy actually, you'll just need some blocks to make a layer under the water then put all the water down. It'll make it easier to turn them all into water source blocks.
