Think organically.See a hill? Build a road that conforms with the contours.

have you tried not using grids?
make up your own sectors/disticts
make your own parks and stuff in the editor
make farming towns
make beachside towns
draw roads that follow the natural landscape
in other words: use your imagination and go nuts

Try searching for inspiration on YouTube, there are some really good vids out there

You can't unless you enter freeplay. Regular mode's civilians will put you in negative income because the insanely convenient and nice looking series of building and road locations are "too far" for them even though it's a couple mile drive.

There are two ways.
Be prepared to sacrifice money and built roads in nice random shapes that will result in ineffective structure and require more civic structures.
Tell Descartes to fuck off and embrace the radial coordinate system. Build things in concentric circles and spirals. You will reach peak aesthetics when you're capable of using golden ratio.

Look up road hierarchy. You can twist and turn streets around, what matters is following that pattern
Have empty spaces such as parks, ponds and lakes to break up the monotony
Play in a very rough map which forces you to be inventive

Going through these screenshots really makes me want to play again. Shame the problem with this game is the traffic AI just fucking breaking once your city gets to big and then your whole city collapses.

best thing that helped break me out of that habit was I stopped playing on maps that were endless, flat terrain.
play maps with lots of rivers, rugged coastline and with lots of mountains and hills.
use the terrain as a guide on how your roads will go. curve roads along and around natural features.
The best map to start this on is Crna Gora. Basically no space to build on if you only buy tiles around the lake. Run a road that goes around the lake and put little 200-300 population villages in the few open spots.

I can't muster the urge to play this because it's too much of a sandbox. I'm not creative enough to set my own goals

Just look at real city lay-outs to discover how cities are structured in real life and attempt to recreate that realism with a touch of your own.

Just Download some MOD and play around with it, no one is perfect from the start.
