Space Engineers, hands down.
Literally nothing cozier than finding a wreck adrift in space, cutting your way in, getting it up and running again, then plowing it into the side of an asteroid to create a make shift habitation then becoming a space scavenger and slowly building onto it etc

Nothing to do in SE. You can build a cool ship if you have 100 hours to space, but otherwise there is no actual progression or point.
This might change with this next update though.

There's literally nothing to do in Space Engineers. Built a cool as fuck ship? Cool, now you can post it online for everyone else to look at but you'll never really need to use it. No worthy enemies to fight, survival becomes trivial very quickly, jank galore, and multiplayer is so unstable it might as well not exist at all. Fuck KEEN for shitting out an unfinished game and then abandoning it.
X3: AP, EVE Online, and Elite Dangerous are the only real contenders OP. They all have severe flaws, X3 is the most rounded of them. Pick your poison.
