GF's, aka summons, are equippable entities that enable you to junction magic into your stats. Simply put, the stronger the magic you junction, the stronger your stat becomes.

Your better off throwing a good strength junction on and sandbagging yourself to yellow HP and spamming LBs. Just doing this with Squall will get you through most of the game.

Also, put enough magic in your defense or attack, and you'll either attack with that magic, or absorb it if it's casted at you.
