Lambert because he's interesting as a character, unlike game Geralt who's just a stand in for the player most of the time. I can see him having many interesting encounters on the path, without getting the fame Geralt has due to not having a songster friend.
Eskel has said it himself that he's not the kind to get into stories worth telling.
Young Vesemir has the problem of having to be in a prequel which means any story he's part of would have no consequence on the other games and he's not known outside his capacity as the old wise Witcher.

The witcher is great because of the characters, without the main characters it's worthless.

It is not the implication that it's impossible to draw characters from history, world building or even create new ones ( hopefully canon ones) that would fulfill the soul of the world, it's the fact that without close Sapowskis guidance and artistic vision of his own fantasy world ( without the book source to build from) it's going to be shit.

Ciri can't have her kid sent to be a witcher because that kid would have to lead the empire in the future and he needs a functional knob to perpetuate the dynasty.
The story would have to that he's with the witchers for safety because some assassin is after him.
While with the witchers the kid learns sighns, monster lore and their sword styles, but doesn't have mutations and can't drink their potions.
He could or could not have elder blood powers.
Eventually the assassins find him and he has to go on the run, probably with Lambert, and he does monster jobs while finding his way home.
You throw in some elfs in it, some other worldly threat in the background and you let the MC go full absolutism in one ending and you have the game of the decade.

If you want a pure witcher experience with a real witcher where you get to have your own OC character you're not getting it from the school of the wolf gang, they all agreed that no new witchers should be trained because it's cruel and that the caste will not be needed in the future.
Letho on the other hand had the ambition to revive his school, and he would do it given the chance. The problem is Letho and his people are not recognizable or too interesting (I love his cold ass, but it's true).
So you have him base his school in Toussaint, because it's out of the way and not in the heart of the empire and have Geralt being forced into keeping an eye on the whole project.
Then you can have the loyalties of the MC being tested between his School, Geralt and gang and the state spies of Nilfgaard who see witchers as useful beyond monster slaying.
