You're not wrong. DQ fans are the worst. You could play so many superior JRPGs for the time it takes to beat a Dragon Quest. Shitty story, shitty and uninteresting npcs where they have 4 character sprites for every npc even important ones because it makes the "charm" of the game.
Still playing at least DQ 5 or 8 is worth it but definitely not multiple titles of the series as the series is super repetitive.

Don't fall for the Persona meme. Persona 3 and the subsequent games are pretty bad unless you're very ok with anime tropes and wish fulfillment. The gameplay and dungeons have very little effort put in, the story is mediocre at best (besides P3) and the game is 80 hours long, with about 65 of it being cringy, padded out dialogue. You are much better off playing the main series games like Nocturne, or the other spin offs like Devil Survivor 1 or Strange Journey (or even just Persona 1 and both P2 games)

If you want to experience what the genre has to offer, then: Chrono Trigger, Dragon Quest 7 or 11, Grandia 1 or 2, Saga Frontier something. I'd also recommend a Tactics Ogre and a Suikoden as well, although you'd probably want to get further into the genre to try those out. I'll leave recommendations to the others, though, as I don't find most JRPGs to be worth playing.

The 90's and early-mid 2000's were the golden age of JRPGs. I haven't played a JRPG that has come out in the past 10 years that has captured the charm and feel of RPGs of that era. That's not even coming from a place of Nostalgia either because I played Chrono Trigger for the first time all the way through last year and fell in love. There is something about the simplicity of early JRPGs that I love.

persona 4 felt like a very overwritten earthbound to me its definitly a classic. smt 4 is overrated and i wish digimon would stop trying to be persona and that holds true for fire emblem and especially xenoblade chronicles too
Chrono trigger. Alternatively, playing with the Hard Mode mod gives it a bit more of a challenge, it's not necessary to grind if you adapt, but you can grind and overcome challenges through sheer force. impossible mode forces you to grind AND learn the game's ins and outs. Not recommended for a first play through.
Golden Sun&The Lost Age, they have rebalance patches out there that make them a lot more reasonable.
Super Mario RPG is a personal favorite of mine, the art style, the super simple, super defined timed hit system is something that revolutionized the genre. Other games had done it before but it made it so smooth. Paper mario also gets an honorable mention for this.
FF and DQ both have games that are great, but which ones are great and which are shit is largely subjective, it's hard to recommend any particular one. My personal favorites for FF are 6 and 7, and DQ are 3 (SNES or GBC) and 9. Take that as you will.
If you want something more modern, Octopath traveler has a lot of really neat features akin to a saga game, but with the gameplay of a more traditional jrpg like ff. I'd recommend waiting till it's $30 or so if you get it.
Tales of Vesperia definitive edition came out recently, also pretty good though it's not turn based.

Earthbound/Mother is a bit over rated due to its cult appeal. It doesn't have as much charm and wit as people want to believe and the battle system is dated even for its time. Earthbound can be exceptionally annoying at times and some of the best weapons you have to grind for. There are better games in the genre, but if you must play it, have save states. Mother 3 is slightly better than Mother 2 but it's not better than most of the games listed.
Been playing this recently and it’s actually fun as fuck. Definitely recommend this one.

What else is new?
Best game to start with is probably Oath in Felghana for a good grip of the series. OiF, Origin, and Ys 6 all use the same engine. Play 1+2 then Origin if you like Oath. 1+2 can be iffy for a lot of people, but I personally love them. If they're not for you then they're okay to skip but worth a shot. The modern games (Celceta, Ys 7, and 8) use a different engine and party system but are also great. The stories aren't directly connected per se, but there's an overarcing lore to the entire series and some games made small nods to the others. So order doesn't matter with the exception of 1+2 and Origin being directly related to each other. I just recently got in to the series this past year and did OiF, 1+2, Origin, Ys 6, Ys 7 in that order. Really' great series though, give them a try user.
Should I even bother with Suikoden 2 if the first one bored me to the point of never finishing it? Everyone praises 2 so much, but they also say you need to play 1 to appreciate 2 and I couldn't stomach the first one at all. The music sucked and combat was beyond easy even for a JRPG so that you just had to auto-battle every non-boss fight. Also the whole 108 recruitable characters thing just seemed like a gimmick because most of those have no impact on story or just seemed to have a few lines of dialogue and then sat in your castle the rest of the game.

FFIX. Finally halfway through disk 3 and the game finally feels like it's going places. It doesnt nail the rotating cast like FFIV did desu. And half the cast is just...nothing. But the other half are all really strong and interesting.
