I assume gmod falls under this category technically?
If so, the portal gun is fun as hell to screw around with (it can fit entire gas station models because screw you why not)
As for nightmare mode: I can't thing of any off the top of my head so oops.
GMod's a good choice. I spent a lot of time with the Stargate stuff.

I've heard of it but never really looked into it, what's that like/what are some fun things to use it for?
Basically it's just a portal with addresses you dial to get from place to place. It's neat for Gmod, but it works best with Minecraft because you can build massive underground/space bases with Galacticraft, and make them only reachable by finding the gate address for the base. The animations and computercraft integration work awesomely too.
There's a lot of power related stuff for Gmod AND Minecraft, but Gmod gets the holy grail of Stargate energy sources, the ZPM. It's basically a source of infinite energy.
Doom 2016 isn't very moddable, but has one mod that does a few cool things. Enemies no longer drop health or ammo, they only get staggered when they have extremely low health, so glory kills are less common, and the weapons are buffed in various ways. To make up for the lack of glory kills, you're given a siphon grenade during the tutorial, and it's more effective than usual. The only problem I have with it is that the chaingun's damage is doubled, making it really overpowered.

Oblivion, combination of Francesco's lvled something something mod and Martin's monster mod. Fixes the gamebreaking bullshit lvling system of Oblivion and adds tons of new creatures. Can't remember if Francesco's or OOO was the better one, you can't go wrong with either.

Gmod, Minecraft, Terraria, GTA SA, Cities Skylines etc.
I don't have one favorite mod, but I think Wire for Gmod is amazing and I'm making a shitty mod for Terraria, it just adds a bunch of weapons and accessories and a few NPCs.
GTA SA i used to install the most autistic mods available, such as bus simulators with terminals all over the map and i used to drive through them for hours. And for Minecraft i just install a modpack and play through it.

I've spent a lot of time messing around with various mods in GTAV, but when I've tried to do a complete playthrough with mods installed to improve it, I'd run into problems where the game crashes or missions don't start properly, and I was too lazy to try to figure out which mods were breaking it. Maybe I'll try again some day.
