I personally found the gameplay fun, I'm one of the few who enjoyed the more open way of approaching the few bases, chosing how to sneak in or just charging a tank in.
However, the story was definitely meh. The entire game feels incomplete. A lot of the later missions are just literal repeats of earlier ones but harder. Also get ready to hear the word Wolbacia a lot.

I love MGSV, and have no issues with what the story is trying to say, just how it was executed. I would have liked more Kiefer lines, or maybe even dialogue choices as Venom Snake.

It feels incomplete because it's literally just an open world and nothing else. Metal Gear has always been a tightly packed, curated experience with clever level design, unique enemy AI (not realistic but fun to play around with, it just felt very Metal Gear,) and, of course, in depth narrative that made you feel like the gameplay was in between the edits of an espionage film.
MGS4 strayed from that and then V abandoned it completely and just gave you a big sandbox and some toys with no actual care or direction put into how you play. It's a completely different game for a completely different audience so obviously existing players will feel alienated and it's obviously the lazier, easier approach.
The story issues also aren't about "headcanon," it's about established canon in previous games. They retconned a bunch of shit and managed to do so in just a handful of dialog scenes.

I remember the very first time I played MGS2, the second I moved from the first piece of cover to the left side of the ship, an enemy who was patrolling at the very top of the ship looked down, saw me and ran towards me. I had no way of seeing the guy except on radar, and when he saw me the camera had to stop what it was doing and fling itself in his direction to show me that I was spotted and where from. I avoided the guy effortlessly since it takes a good 30 seconds for him to run all across the ship to investigate the crate I was behind a minute ago, but that doesn't change how full fucking retard the camera was. Literally everyone complained about it in MGS1 and 2 and the only reason you're defending it now is because you want to whine about MGSV so you have to pretend the previous games were perfect in comparison.

Venom Snake exists purely to keep Big Boss's seat warm enough for his brand name to be viable later. And let's not forget that the aforementioned isn't solving world hunger; it's a warmongering military state that's intended to dethrone the Patriots and put the world and its conflicts under Big Boss's thumb. Ended up being pretty easy since you don't need to do every side objective at the same playthrough of the mission

I like how they made Quiet's presence in the story completely optional, yet Skull-Face's death scene and most of the later tapes dealing with the missing third vial of the Vocal Chord parasite makes no sense without her being part of Diamond Dogs. It's such a slip-up compared to even MGS1-2, which would feature alternate scenes/dialogue during Snake's/Raiden's first encounter with Meryl/Pliskin depending on whether he has a weapon or not.

You can still get Quiet by replaying Episode 11 after you've already completed all the other story missions, including the Truth mission (so I'm guessing they were expecting players to do that), but you will miss out on a couple of cutscenes involving her like when she knocks a Diamond Dogs' soldier teeth during the first outbreak or when she goes on to that gassed area to retrieve Shabani's necklace.
Incidentally, Huey will also mention D-Dog in one of his tapes, even if you never bothered to extract him and raise him in your base.

They actually took out moral choices in the final game. Originally you were allowed to kill child soldiers in MGSV, with the only penalty you would get for harming being loss of heroism points, but in the finalized game it results in an instant mission failure.
