I was about to say Arch Tempereds but as the monsters are able to dish out more damage your builds get more refined so you end up scaling with it. AT's are still quite challenging but they're not "hard".

Make sure you do your botanist optionals too if you haven't already so you can grow three things at a time and start crafting flashbugs. You pretty much always want to be growing flash bugs, blue mushrooms, bitterbugs, mandragora, and might and adamant seeds and just keep rotating them every so often. 300+ hours in and I only just found out you can meld dung bods from the elder melder too so you don't need to run around in an expedition following a monster hoping it takes a shit.
