Because you're shit at games? It's pretty easy and you can kill most bosses in seconds with a greatsword.

Im about halfway through and I like it
Its no where near as good as demons or dark souls
Most bosses are just doge, hit, dodge, hit, doge, hit so far. not saying souls doesn't have that problem but there were some bosses that did something cool, especially in demons souls

It takes some getting used to, but Salt and Sanctuary is pretty easy when you compare it to other Soulslikes. That's mostly because the player gets access to really powerful weapons and spells, and mobility comparable to Mega Max X by the end of it. It's like the designers decided to add things that they thought were cool or interesting without much consideration for balance. Whether or not that's a flaw is up to you.

Its a fucking metroidvania without a map. I just hate that. The rest the game is super easy but its so frustrating moving around and i dont remember where shit is.

Meh, maps suck out the charm. I feel better when playing these games without them, even if I constantly get lost like a bling mutt.

It's LITERALLY dark souls in 2d. I would even go as far as to say it's more dark souls then dark souls 2

Dark Souls also had timing, stamina management and spacing to a certain degree, at least in the first game. Salt and Sanctury's 2d nature where you can roll through the boss means those elements are no where near as prevalent outside of the gimmick bosses like the tree.
