From what I’ve heard the 2015 version is pretty good, on top of adding in a bunch of new weapons and armor. There’s also the AA add-on which adds cannons and huge fortresses and shit. My rig is pretty good so I think I can handle all the additional NPCs and FX.

Somewhat. TES leaving its generic High Fantasy setting really happened with Morrowind. There were hints with Daggerfall, but it didn't fully come out until Morrowind, because with Arena and Daggerfall kind of played it by ear.

For example, in Arena, you actually go to Dagoth Ur, the dungeon, to grab a piece of the Staff of Chaos. Because Dagoth Ur was only a place at this time, Talin doesn't bump into Dagoth Ur the guy at 4 AM wondering who the fuck this Imperial Guard is and how he broke in. Nor does he even acknowledge Talin in Morrowind despite the fact that, going by the timeline, dude was active. Talin should've had to plow through Dagoth Ur at some point.

It isn't at this point. Nearly every mod barring ridiculously script heavy ones like World Eater Beater can be ported over in about five minutes now. There are tools to convert the meshes/textures for you in a couple clicks, and for most ESPs, it's a matter of opening the Oldrim ESP in the SE Creation Kit and saving it. The reverse is true if you're curious and don't want to buy SE for the SE "exclusive" mods.

Combine with the improved .exe and overall improved stability (surprisingly), there aren't many reasons to pick Oldrim over SE anymore.
