You often cannot repeat the same movements and clear a pattern (unless it is static), so what you need to learn is what you should pay attention to, more than a set of inputs that will lead you to victory. It's sort of memorizing, but developing good intuition for a pattern is often applicable to more than that one pattern, which make the list somewhat shorter.
I can totally see the flashcard comparison: I grind spellcards when I want to 1CC a new game (if it has spell practice).

For EoSD stages 1-3 are fine and I can do Patchy with some trouble as she's not too bad but still a challenge.
Other than that, stage 5 and Sakuya just fucking slaps my shit in and I barely scrape by sometimes to stage 6 with little to no resources, and if i'm still alive after that Remi just finishes me off.
For IN I either get filtered by Reimu or Reisen. The farthest i've gotten was Eirin's spellcard with the wall of white orbs you have to whittle down.

The biggest jump I ever made in skill was the realization on how important it was to be proactive rather than reactive. Don't dodge bullets, go through gaps instead. Streaming is a major example of proactive play rather than reactive. The main caveat of this philosophy is that being proactive generally requires planning and is hard to act upon unless you already know what is coming in advance. Which comes back to the topic of memorization. Regarding the development of skill, it basically allows you to analyze and create strategies faster and more effectively as you get better. It's going from months to weeks to days to 1ccing a game the day it releases. When you've actually realized the game, you learn to recognize what a spellcard is really threatening you with upon first sight and can intuitively defeat it without feeling pressured.

For EoSD stage 5, I can just recommend that you practice, in actual practice mode: Don't waste your time playing through the easy stages when you can't clear stage 5 comfortably. Note that "comfortably" doesn't mean that you have to be flawless, it is fine to bomb anything that gives you trouble even after you've practiced: In an actual playthrough, you should have a lot of lives and bombs after playing through the earlier stages.
Practice stage 6 as well, if you have unlocked it in practice mode (otherwise, unlock it). If you can clear stage 6 in practice mode with the available bombs and lives, and stage 5 doesn't kill you too bad, than you can probably start trying to 1CC the game for real.
Feel free to ask about any specific spell card that you have trouble with.

I felt she was easier once you figure out the stars have smaller hitboxes than you might think. Plus Reimu has the easy deathbomb abuse perk and Yuyuko is incredibly powerful.

I keep hearing that Reimu/Yukari is ez mode, but I never got it. The Malice cannon trivializes a few tricky spell cards, and the lower point of collection means that Marisa/Alice more easily can get extra lives.
Youmu is just weird to play, although I guess you just tap shift to forward focus her ghost shots.

Reimu has homing and can easily deathbomb and both her and Yukari have great bombs whereas Alice's is a complete joke. Youmu has a very powerful bomb and Yuyuko has large attack spread and damage which means you can hug the bottom of the screen and clean shit up as it approaches.

I am amazed at the amount of people who have trouble with this card. Go a quarter towards either side of the screen. Where Sakuya ends up moving to. Stay there. Do not follow her. Stream very slightly. But remain where you are. She will move back there and die.
Regarding the rest of her cards, for Sakuya, rank matters a shit ton more. Try deathbombing on purpose to lower your rank. It makes her spellcards far easier.

That's a spellcard that will completely fuck you up if you don't react appropriately, but can be cleared quite consistently when you know how to do it.
The red knives are actually aimed at you, so if you stay still while she fires, you can find a safe line through them. The same goes for the blue knives, but there may be a few knives within the lanes that you have to react to. Thus, the plan is to do minimal movements to stay in the lanes between the knives: first adjust yourself to squeeze by the red knives, and than the blue.
In addition, to actually damage Sakuya without moving much, you have to position yourself approximately under her. She will teleport from the left and right side, but always to the same two spots, so just pick the left or the right spot when the card starts, and wait for her to get back to where you are as she teleports around.
