You can just watch most of these remakes on home media and most of them don't do much new for the story, whereas in order to play past games you need an emulator or the original console and game. Remaking an old game appeals to the nostalgia crowd and to kids who likely wanted to play these games but missed out on the originals, but don't use emulators or want to bother getting the original systems

Mechanics can be streamlined, controls tightened up, midi music can get the full orchestra treatment, better voice acting, the list goes on. An incredible movie already tends to have access to what makes a good movie fantastic from the get go, and tends to fail when one tries to improve it. Not that game remakes are always praised. That Sh2 remaster comes instantly to mind as a fucking joke

The Lion King wasn't made with polygons and MIDI music, it had a full orchestral score with high-budget animation.
