the potion seller was clearly trying to prevent the knight from dying because of his strong potions. he better find a different potion seller.
He thought the Knight was not strong enough to use his potions but how could he know? The knight could have been strong enough, and made the potion seller look like an asshole.

Is it truly worth that risk? You're right he cannot know. So there is equal chance of him dying or not dying. As a potion seller I wouldnt take that chance as a dead knight could give my potion shop a bad reputation.

As someone who briefly went to pharmacy school, I can assure you that there is a great deal of moral conjecture involved in selling certain medications to certain people and you absolutely have the right to refuse a patient their medicine.

The Potion Seller knows his own brews. One look at the Knight was enough to tell him he didn't have the fortitude to handle his strongest potions, so he refused to hand them over. If a weakling like the Knight were to die from the potion it would be on the Seller, which is bad for his reputation and business. So he was protecting him. While the knight may have perished in battle as a result of not being able to ingest a powerful potion, his death would have been guaranteed outright if he were to have ingested such a potent brew unprepared. It's unfortunate but that's just how it works.

The potion seller. The knight was prepared to die in battle and needed any possible edge. Potion Seller arbitrarily denied him service so Knight is probably just going to die by the sword anyways.

He produces only the strongest potions, implying that he is at the top of his field and his usual clientèle are beyond the realm of man or beast (demigods, demons, fae). He is so experienced he is able to aptly judge by sight whether or not you are capable of consuming his potions and surviving.
In the Knight's case it was clear to the Potion Seller's expert, professional opinion that he was simply TOO WEAK for his potions, and requested that he find a seller who provides appropriate beginner grade potions for weaklings so that he doesn't die.

Now that we have established the Potion Seller's expertise and unbiased judgment, a responsible potion seller/consumer relationship dictates that the Potion Seller must refuse the sale of product he knowingly realizes will be used for grievous self-harm resulting in death.
Demanding the Potion Seller sell the Knight a potion is like asking him to have a direct role in the Knight's suicide, something that would now unfairly weigh on his conscious for the rest of his life.

- By his rights as a business owner, the Potion Seller can refuse a customer if they violate the rules of his shop so long as they are not unjustly prejudiced rules (physical capability is not an an unjust prejudice, such as being too short or too fat to go on a ride at the amusement park).
- Selling the Knight a potion that he knows will kill him directly harms the Potion Seller's business, as it publicly undermines his credibility and integrity. It also damages his reputation as an elite, premium potion selling service.

there's no evidence that he's known as that, maybe the knight would just say that to any potion seller, and you have no evidence he's known as "The Potion Seller" abroad, or even that his potions are good. perhaps the potion seller is just really full of himself when in reality his potions are average, maybe even worse, maybe he's new and was convinced that telling his customers that his potions were too strong for them would make them want it more but it got too intense and he forgot to actually sell them

The knight should have asked for potions at his level, drank them all, then used his boosted stats to rob the potion seller.

Labeling the Potion Seller as an unreliable source is extremely difficult and contrived. The only way you could do it is by implying that he literally just started his store, and is opting for pure lies and hardball tactics against his first customers but also is "just forgetting to actually sell to them".
To suggest this is a "reasonable doubt" is retarded. It's the opposite of reasonable, it's extremely unreasonable, his name is fucking Potion Seller, how the fuck does he forget to sell potions?

The more likely explanation is that he only needs to sell a small amount of his extremely powerful potions for exorbitant prices.

Unless you want to play make-believe about how he just "forgot" to sell, it's apparent that just taking money when he can isn't his top priority. He is prideful and arrogant, but the point of his pride is the supreme quality of his potions and the strength of his select few customers. He aggressively recommends the Knight shop somewhere else.
Unless we get confirmation or any evidence that the Potion Seller is merely a shitty distributor, it's pretty clear he knows his shit.
