You collide with them multiple times to show you they are bouncy. You already know you have a downslash pogo stick attack at the point you find said mushrooms. They even put some of the shrooms right on the floor to make sure your retarded ass will hit them and see they bounce. It is your own fault for not using the tools you are provided.
The worst part is that there are mushrooms earlier on that just break when you hit them and nothing else interesting happens so you learn to just ignore these shrooms instead of experimenting.

the breakable mushrooms look nothing like the bouncy ones.

The game teaches you immediately that you can hit downward while in the air, then it crafts situations where you will need to hit an enemy below you which teaches you that pogoing is a thing. Then as you are descending the fungal wastes, they introduce bounce shrroms on the way in places you will naturally end up landing on them and find that they are bouncy. Any idiot with a brain knows that something bouncy in a video game can be used to gain height so it is at that point where you put 2 and 2 together and learn that you can do that by pogoing off of them. You lack critical thinking skills if you honestly believe this is dishonest or unintuitive design.
