Reason why I love dwarf fortress or older roguelikes before the roguelike meme too over and casualized them is that every time I booted up I didn't know what the fuck was going to happen, where every time I boot up your average RPG I know exactly what is going to happen, where to go, and what weapons to use, and the only 'role playing' I do is giving myself limits, rather then trying to test my choices vs a dynamic world of options.
Pretty much this, you can get into a great detail about how a limb got blown off and shit. Those systems tend to be easy to mod as well.
Neo Scavenger isn't really text based combat either, it's more of a turn based RPG
Text based games are significantly easier to program and make since you don't need art assets, but because of this simple fact 1 person, or a small group of people can create a shit ton more content since they don't need art assets for every little thing they want to make.
Also people still play D&D in 2019 despite video games being mainstream for 30 years now, and most Multiplayer RPG fags have returned to playing MUDs because the current generation of MMORPGs are fucking shit.

My argument is that you're a painter and you have the full range of colors on your palette and you're choosing to use black and white only. You can do that, but you're severely squandering your toolset, not to mention whatever you make, no matter how good it is, can never be as complex as something that utilizes the full palette well.
Text allows for a lot more complexity than games with graphics rendering. Go look at Hellmoo. An MMO with even half it's features would mean I never play anything else ever.
Also makes adding new content much, much easier. The few MOOs/MUDs that are still relatively popular get very frequent updates.

Also, you are not filling in the gaps of text based games with your imagination any more than you are when you read a book, and books are far more widely considered to be art than video games, so this argument holds absolutely no water.

Text games can have sophisticated gameplay systems and narrative choice that even the best "choose your own" books do not. Nothing beats playing a TTRPG with a quality DM, but text based games come the closest.

These are all constructed from my time studying art history, observing what the most formidable individuals call art throughout the ages, how art changes over time, what is the most successful and considered an accomplishment, and also analyzing the works themselves. If anything, the odd argument here is yours, which tries to assert that somehow a game like Dwarf Fortress is the better video game because it discards entire aspects of video games in order to make one aspect more complex, even though we have an entire decades-old culture that says otherwise.
And why IS Dwarf Fortress the better video game? You seem to think so because you don't consider graphics or sound to actually be part of video games. You think they're superfluous elements. But there's no good reason to think this about them any more than there is a good reason to think that sound is a superfluous element in movies, or set and costume design are superfluous elements in plays. What you say is true. There are concepts and dynamics that can be conveyed with graphics far more efficiently than text. Anyone who has actually tried to design a game of any sort should recognize this.
That said, actual games are created in the real world. Graphics are expensive, typically far more expensive than text as a means to express the same thing. This puts severe limits on the economic viability of any game, in addition to adding another layer of complexity and way for it to be shitty. Consider an idea for a text-only game with 20 different playable characters and mechanics deep and complex enough for each of those 20 characters to be unique. But, because you can't afford graphics for all 20 characters you cut it down to 5. And because representing all those complex mechanics with graphics is also hard and costly you cut them too. And then because you hired shit artist anyway, the 5 characters look boring and generic.
So instead of having a unique and interesting, but text-only game, you have another shitty RPG maker piece of crap with generic badly drawn anime characters and boring aesthetics and graphic design.
Alternately you have a zillion dollar budget, but your only option is to make a multiplayer open-world battle royale meme game

The point is that a game like Dwarf Fortress, with exceptionally deep and complex rules, can exist because the designers were not hampered by the need to express anything with expensive graphics. Sure, later on, once the game had found an audience, artists were found that were able to refine the experience by adding graphics. But if having graphics from the start was a requirement, Dwarf Fortress wouldn't exist.
And yet, a great many literary works are considered art. While Video Games are mere thought of as children's diversions.

The end result, since it utilizes more tools, would be more successful at doing that, if each tool was used well together.
A lot of economic and also political factors influence what ends up getting created. But at the end of the day, what utilizes more tools in the arsenal well is what is better, because it is more complex, and it is more complex because it utilizes more tools in the arsenal well, which is more difficult to pull off.
