Kinda like a survival horror where the house they live in is really fleshed out. Some of the baddies from the show are trying to kill or abduct Muriel and Eustace and Courage has to stop them as best he can while using the house to hide to regain his anxiety or something like that.

I really couldn't figure out anything that will truly honor the show. I'd say an action platformer like Battle for Bikini Bottom from the era that the show was running.

Similar in structure to the ps1 Rugrats games where the house is your hubworld and you have a bunch of different objects around that area to interact with which takes you a level based around what you interacted with each one having a small self contained story. Gameplay wise it would be a 3D Platformer with some puzzle elements and the occasional genre change minigame.

Survival horror adventure game with a heavy focus on puzzle solving with occasional action sequences. Maybe occasionally a tasteful escort mission or two with Muriel and Eustace. Structure the game episodically over several levels with different monsters, NPCs and/or settings and set an overarching plot between them. Good amounts of atmosphere, mostly minimal dialogue (except for the Computer) compensated with flavor text for puzzling purposes.

Important: have an assigned button that makes Courage do random sounds and gestures.
