Cthulhu only got one story so I don't know why he became the icon associate with pop culture surface knowledge of Lovecraft.

It's Derleth's fault. He coined the term 'Cthulhu mythos' to describe Lovecraft's stories because he's a hack who views the world in black and white morality and Cthulhu is one of the most powerful malevolent entities on earth. Then the Call of Cthulhu RPG and video game happened and it stuck.
