You’re supposed to chain links for as long as possible, and a single chain can go into the hundreds. I bet you just awkwardly fly around and collect 20 chips before moving on.

People have to be told how to play it because they’re not accustomed to score-attack games since the arcade has been dead for decades. If you play mindful of the fact that score is the entire point then it’s pretty obvious what to do.
