Because even on the cheapest side, spending $50 for hours of content is a non issue.
I play tabletop games and paint miniatures so spending £40 weekly on hobby stuff is pretty normal to me, if a cool game comes out costing a bit once in a while I see no problems spending a bit for it, especially if it's content heavy like mountain blade and not some indie shit like celeste or similar.

To make people feel better, not being feature complete does not = "we still need to make these features". It means they haven't been implemented into the master build.

Features are developed on personal builds, and can sit there for ages before being implemented into the main build. This is most likely the case with Bannerlord as well.
