start with Fane
He's something out of a horror film with that damn face ripper.
Premade is better for the the story bits. After you run through everyone's story, a custom character to keep things fresh makes sense.
Origin characters have an extra side story that you'd also get if they were your companions but since you are them you have more control of how they act during their quests. On the other hand the custom MC's have a different innate source power(all customs have the same one) and can freely choose their race, gender and social tags. Partial spoilers but at some point you will lose at least 2 or 3 members of the origin characters depending on if you're playing an origin character or not, so no matter what to experience everyone's story you'll need two playthroughs
fane comes with to many spoilers if you play as him, great for a second playthrough though
I picked Red Prince but I'm not digging his character or the skills I picked. Is the Dwarf character good? Probably run a more cleric style character with him. Lots of health and armour with defensive skills to back the group up.
premade only for side stories unless you really really want to make your own. i wish i used a premade char
One thing I don't understand is

Origin characters have more story. Custom characters is a blank slate that you can roleplay better.

I always play custom because they can have flexible backgrounds and I can change it whenever I want. Also if it's your first time playing take red prince as a companion, hes best bro.
I'd argue that Lohse is in a similar boat of better as a second playthrough just because her story actually majorly changes her relation to the main plot
Not everyone goes through the sewers? By my count theres at least 5 different avenues of escaping the joy

Lohse is slightly less spoilers, though given that she is the only character not chosen by a god it does change things up
im playing it right now...im at the driftwood area and i wonder how much more content there is...can someone tell me a bit about the sice of the story without spoiling to much?

Thats the beauty of the game. It has many correct ways. But you should come back for the faceripper no matter how you escape. Having two shapeshifting masks can be a plus.
Driftwood is Act 2. Act 1 and 2 are about 60% of the game. Its also the best part of the game.
You're at the start of the second act of four very differently sized acts.
Giraffe gf is cute, but half demon cuter.
If you are playing solo use prebuilt. The stories are quite good. If you are playing with a friend both should go custom. Save the undead for your second playthrough or you are going to have a baaaaaad time.

Larian games are usually frontloaded.
Premades are better than anyone bar maybe Fane.
Beast, Ifan, RP and Sebille might as well not exist, don't bother playing as them, Lohse gets a particular ending for herself and some meager extra EXP. in act 4 for her questline but she's mostly a non entity, Fane is the special need child and is the only character that matters in the grand scheme of things and the only character worth playing as since he gets actual juicy bits of info you can't access otherwise and a special ending route.
