Either its all one massive coincidence and they just put all this extra dialogue in for Handmaiden by accident or its intentional

I don't know about the shitty new movies but nobody in the OT talks about the Jedi as if they were mythical. Luke knows stories about them. Leia directly acknowledges their involvement with her father during the Clone Wars.

The death star guy dismisses Vader's reverence for the Force as "sad devotion to that ancient religion." And why wouldn't he? He'd clearly comparably young, arrogant, and there are no more Jedi running around beside Vader. The guy isn't saying the Force doesn't exist, he's dismissing it as representative of the technogical authoritarianism of the empire.

And as for Han, he simply says that in his travels he's never seen anything to suggest that there's some all-powerful Force that controls everything, especially his own destiny. He doesn't express disbelief that Jedi existed, he's just a cynical blowhard who's never met one.

You also have to remember that no matter how big the Jedi order might have been at its height, there are BILLIONS of systems in the galaxy. 99% of people in the galaxy are likely to have simply heard tales of the Jedi at best. And those tales invariably revolve around them being peacemakers, war heroes, and maybe performing some mystical feats. But if you've never seen one personally why would you have any reason to think there was anything particularly special about them? Especially if the Empire is already trying hard to downplay pretty much everything about them.

As an autist who read a considerable part of the EU, no.
There are some that are good nonetheless. The Darth Bane trilogy was written by the same guy who wrote KotOR 1 and despite the awful shit he wrote afterwards, it's pretty nice and has a few (kinda forced) ties to the games.
The Darth Plagueis novel is pure political kino, one of the best (if not the best) novels in the entire EU.
The Tales of the Jedi comics are also nice, specially because they are old as fuck and have a nice aesthetic. They pretty much tell the entire backstory of the KotOR setting except for the most recent shit like the Mandalorian Wars (which are partially covered by the KotOR comic, though they aren't the main focus of the story).

He deconstructed it through a particular character to tell an interesting story, so it obviously wasn't just for the sake of it. Kreia exists because of Avellone's skepticism toward the setting but as an RPG the game doesn't force you to bend the knee to her and agree that her assessment is correct. Avellone just likes to ask questions and extrapolate from there which triggers people for some reason. I love Star Wars and its usual moral simplicity, and I love KOTOR2 for asking unusual questions and providing a different window into the setting. It's not like we've seen a bunch of imitators learn the wrong lessons and try to carve up the setting since then.

Canon Star Wars not only ends, but it ends with Luke's edgy grandson getting off his death sticks and toppling the One Sith Empire. The Sith dogma is fucking dead, and the Jedi dogma is too, since Luke's idea of Jedi in canon was "just be good people and train to use the Force responsibly," and not the gigabrain trash the Old Order became. Dark side users and light side users are free to be who they want to be, and the endless cycle of domination, decadence, destruction and domination on the opposite side is broken, leaving a truly balanced world where people have choices. Republic, Empire, Unalligned all exist, but aren't at war. They hit a stable place just before Disney ended it for their fanfiction to take over.
I wonder if she would be happy to see it.

I can kind of see the want to go beyond the good and evil duality of the series and yeah, it's probably more encapsulated in a few characters in KOTOR 2. But in the end, it still ended up being Jedi vs Sith. It's kind of like an ironclad truth in that lore. I doubt the new Star Wars sequel will really change things up despite the writers really wanting to desperately upend it. The fans don't seem receptive of it unless it's done well.

To be the devil's avocado here they must've implemented that to teach new RPG players to talk to their party members to get more out of them.

Revan, Scourge and the Exile go fight the Emperor but he is too strong. Eventually he starts electrocuting Revan and picks his lightsaber to kill him. The Exile throws her lightsaber to deflect the blow instead of taking the chance to kill the Emperor at the expense of Revan's life. Scourge realizes everything is lost and that the only way to make their sacrifice worth it is to pretend he was going to betray them all along to gain the Emperor's trust. He proceeds to backstab the Exile and instantly kills her with no issue.
Also T3M4 gets blasted into smithereens by the Emperor.
