Jesus Christ, you don't need to fucking vulcanize smashburgers. If the fat is literally burning off you have that shit way too hot you idiot. Make sure you're using 80/20 ground beef, make your little ball of raw beef, sprinkle salt and pepper over it, press it into a hot DRY cast iron. I use my spatula and press my pepper grinder against it to get even weight down. Let it stick, let it brown. Once you can see that most of the burger is cooked, the edges should be cooked and it should be almost done cooking overall, scrape the burger off. Make sure your spatula is metal with a flat edge and scrape it off the cast iron, then flip. Immediately add cheese and cook just until the cheese is melted, the patty will be done.
