WW HD and TP HD are relatively easy ports if they still have the source code, all they have to do is remove the gamepad features, I expect one of them or both in a "collection" of sort to come out next year, as Nintendo says they want to publish a Zelda game a year and this one is already taken by LA and BOTW2 can't possibly come the next one.
SM3DWorld, XBX and W101 are a bit more difficult, as both have intrusive gamepad features, W101 and SM3DW would need to have some levels redesigned altogether, speciofically W101 would need a separate way to do the "building interior" camera, the draw feature is a non.issue because you can and should use the stick, and if they removed it from Super Mario Maker they can easily do this, the problem is I can see them not finding the extra development worth the earnings, same for XBX, which would need the whole menu system redesigned, and both are extremely nichè games, SM3D World is the only one I reasonably expect.
Pikmin 3 is a different beast altogether, you simply can't port it without the gamepad, in fact I suspect Pikmin 4 was ready to go out on WiiU but canned because they needed to push Switch and didn't want to have new software to keep the WiiU alive and make someone not jump ship, but at the same time couldn't be repurposed for Switch, kinda like Star Fox 2 was already completed and not released

Pretty sure it's the same deal as with BotW 2, the devs said they originally had so many DLC ideas they decided to make a sequel instead. I bet we'll see Odyssey 2 at E3 next year, maybe even sooner.

There was already a picture-in-picture mode in the original game so that you'd see the building interiors on a screen on the TV.
Xenoblade X was all playable just on the Gamepad, with the segment map screen replacing the normal gameplay screen when you needed it.

Well, most of BOTW's development time was taken by a) creating that new team and b) creating the new engine and the world itself. BOTW2 has been said to be taking place in the same land (not without changes though), and will simply be in an updated engine. There's also no telling how long it's been in development, since BOTW came out early 2017.

Every project was extremely new and unique in some or the other way.

Pikmin is in a bit of a danger zone.
It was a relatively prominent IP in the early 00's, then the third game was delayed from 2008 all the way to 2013, which THEN released during the launch year for a dead console. It will be a 20 year old series by the time a Switch game comes around (if ever). Right now there is almost no room for new fans, all meager exposure to the series will have been through Smash. I'm hoping an HD remaster of the original trilogy will revitalize the IP, otherwise it seems like Nintendo might just silently pull the plug.
