You have to beat them before the US gets a friendly opinion or before they can react. Best way to do it is to let the texas army occupy stuff then move in and kill their army before splitting off one brigade for each texan province and occupying it all on the same day. Just pause the game and move the troops somewhere and back to line it up to finish within the same week and peace out when they're occupied.

Unironically delete all your militia and replace them with regular infantry right when the game starts. Do not even touch Texas. They will occupy a lot of your land but that doesn't matter since they have a small army.
Once all your shit is full replaced and you are fully mobilized, then you fight and annex Texas.
