It does have gliding, climbing, and resource collecting. It doesn't have physics stuff yet or the grass stuff, but game is still a year away. It could be placeholder right now.

Not necessarily. If it's just a cosmetic change it could absolutely be a last minute addition. There's no reason to focus on cosmetic details like that when the point of the game isn't to be a tech demo to sell consoles. They already have grass burning because there's mechanical implications there, I don't see why it's impossible to edit the grass model to be transparent when cut.

It's more complicated than that. They not only would have to animate the grass to have a destruction transition but also would have to program the possibility of loot dropping every time grass is cut, which could bog down the game depending on how they do it and how deep the item pool is.

If they want it to be exactly like BOTW grass then sure, but the whole loot drop aspect of the grass isn't exactly a core key feature. You expect it in Zelda because grass has always done that in Zelda, but in this it's not that important. Give the model a cut state by making the upper two thirds of it transparent, have a particle effect that looks like blades of grass exploding out of it when your sword makes contact, done. If they want to get really fancy, they could make it so that grass that gets burned once can't be burned again until it grows back, but that's probably not going to happen.
