Why can't game developers just handle sales transaction and installer downloads on their own websites and implement a key system in order to ensure downloads are legit instead of relying on steam or epic? Software sales used to work fine like that back in the day and even with denuvo piracy has never really disappeared, so I don't see the benefit to those online stores besides developer laziness.

The only game I know like that is Starsector.

They can but it costs them to do it and so steams 30% cut is well earned for doing all that hard work.

Some do (uPlay, Origin) and people don't like it. The general consumer wants everything in one place.

No, I don't want launchers. I want the games on their own. Just sell me the fucking game on your website and I will buy it, but if you expect me to download your launcher, when I can just pirate the game and get an objectively better version of it, I have no reason to pay.
