People usually recommend Embodiment of Scarlet Devil (Touhou 6) and Perfect Cherry Blossom (Touhou 7). The former was a soft reboot and has no gimmicks but the later is more polished and has some quality of life improvements. Pick whichever you feel like, really.

Yeah. It's an old series so it's kinda of stagnated. Don't feel discouraged though, gameplay discussion still happens every once in a while and people will help you out if you have trouble.

I'm in the process of getting gud myself, playing every now and then.
I still suck ass but i refuse to spam continues and bombs despite being unable to finish on normal 1cc so i alternate between 6-7-8-9 to get some fresh levels, 1-2 tries each.
