Basically he absorbed the soul, control of his body got split between him and the human, the human got him killed, he died on the flowers, then Alphys comes along and injects determination into one of them, and he gets resurrected with no soul as Flowey.
I don't understand why you can't just take the soul of some random asshole boss monster nobody cares about and slap it in Asriel if being soulless is the problem

No, monsters can absorb human souls. A monster + human soul can cross the barrier, but seven souls shatter it. Asriel absorbed Chara's soul after she died.

Homestuck has this thing where the retarded "mechanics" are really explained in depth and sometimes in textdumps. For what it's worth, at least gives you an idea of how it works.

Meanwhile i think Toby tried to pull the same shit with the meta "in game" UT mechanics like LOVE, save file fuckery, the other kids and so on, but he's just needlessly vague about it a-la Dark Souls lore probably out of laziness or lack of resources to actually expand on these said concepts. He's just lucky it worked in a way that people interpret it theirselves or just listen to whatever youtuber spoonfeeds them an explanation of it.

Humans can absorb monster souls, but don't get much power as you need the power of hundreds of monster souls to equal 1 human soul.
Monsters can absorb human souls and get LODS OF EPOWE from each one; getting 7 makes you a god.
When the living Asriel absorbed %name%'s soul and died like a bitch, both ended.
Determination allows something to keep living after it would otherwise die, typically via time travel.
Time travel in this way does not completely erase the memories of the rest of the world, and the rest of the world will have hunches or remember the aborted timeline somehwat. Memories in Undertale are sticky and are not completely vulnerable to time travel.
Determination also allows the memories of the deceased to gain the will to live, though at that point the deceased's emotions and SOUL are gone forever. The living entity is NOT the deceased, but an empty shell which has inherited the deceased's memories.
It's also possible to make a right Fug of it and Alt+F4 yourself out of everyone's memories, past and future, like Gaster did. We have no idea exactly how, but the CORE was involved somehow, so it's likely UNLIMITED POWER was somehow involved.
Anyway, back to the entities:
A golden flower inherited the memories of Asriel. As a golden flower is neither a human nor a monster, the golden flower is able to absorb both human and monster SOULs. This golden flower proceeds to go full deviantart OC donut steel before the weight of its own faggy inherited memories end up wrecking it.
Frisk inherited the memories of %name%, but %name% doesn't remember their own name, and thus takes whatever name the player assigns to them.
The memories of this entity hijack control of Frisk at some points in both the true ending, and the post-true pacifist ending. The entity claims to be trained by the player's decisions, using the player's input in lieu of any actual emotions.

You can't solve the problem with a surrogate soul because he'll just reject that soul too and get himself killed again like a bitch.
It's likely that the player would be strong enough to resist his bullshit for a while, and keep Asriel's will alive for a while without him inevitably wrecking himself, but he'll find some way to fuck it up at a key point anyway.
Especially considering all the people who would willingly make that sacrifice don't view themselves as the jailor of a traitor or the tard wrangler of a suicidal dumbass, but as being in love with a rainbow OC'd little faggot shit whose accomplishments include bringing eternal pain to his sibling, monsterkind, and himself.
