It's got different content and better feeling gameplay even with some of its faults. It's worth playing K1 and K2 even if you're played 1 and 2 and vice-versa just for the different structure and content.

What about the story? I heard they added new cutscenes and stuff.

In K1 you have a couple things for Majima Everywhere in the main story (Like him invading the funeral like he should have in the first place and there's a section after Lao Ka Long where you fight some Tojo Clan with him), you have a bunch of Nishiki scenes showing his transition from somewhat trustworthy friend to the original asshole he was, and then you have an entire sequence to get Yumi's ring which has Shinji appear a bit more. There's also a substory that explains the whole Sera thing which was left open in the original game.
In K2 there's nothing new in the main story besides how they dealt with Shinseicho being removed (It's just them changing the story to having you find the shogi piece in Sotenbori and going through a bunch of small puzzles). They relegated new story stuff to Majima Saga which explains how he actually owns Kamuro Hills/Majima Construction and has him meet a couple people from 0 in Sotenbori.

What the fuck is the story in the rest of the games after 2? It felt like it was an actual ending to the series after playing it.

They are literally all some variation on "Kiryu has left the yakuza life behind but gets pulled back in because [x]".

How's judgement?

3's about Kiryu living his life at an orphanage he owns before a conspiracy happens to try to destroy it.
4's about Akiyama who is the owner of Sky Finance that gives no interest financing to people and one person he gave money to is part of an enormous conspiracy. Saejima's side is about explaining why he went to prison, some of Majima's past, and him getting roped into the conspiracy. Tanimura is a corrupt cop that is investigating the conspiracy because of certain events that pull him into it. Kiryu gets pulled into the conspiracy because of Saejima and a character from 3 plus Majima later on.
5 is about Haruka becoming an idol and Kiryu going into self-imposed exile for the kids because Morning Glory Orphanage needs money and for people not to look up Kiryu's past so that the kids can live properly. This leads to a conspiracy that Kiryu gets wrapped into regarding Daigo. Saejima's side is about escaping prison and figure out stuff about Majima before getting into the conspiracy. Haruka/Akiyama's side is about trying to find out what the hell instigated the conspiracy as Haruka dances. Shinada's side is about his own drama before he gets wrapped into the conspiracy.
6 is about Kiryu trying to find Haruka's son's baby daddy before getting wrapped into a massive conspiracy.
Shin's going to be about the Omi taking over Kamurocho and Ichiban trying to find out why his boss sold out the Tojo to the Omi and also sold him out.
