Since it came out, Red Dead 2 has been my go to. There is nothing more comfy than just immersing in the world and going on cowboy adventures.

Slow form strategy games like grand strat and 4x I tend to play on highest difficulties and be too perfectionistic to feel comfy.
Coop mp of eu4 or ck2 can feel comfy for me but it's by definition not something I can start on my own, the benefit of coop to me there is that my perfectionism doesn't get in the way, there's no urge to savescum.
I could zone out to vermintide for a few months last year, that was nice.
Minecraft takes up too much time and I haven't played it in years, but it is very comfy, but it isn't comfy to realize you just deleted a month from real life.

If I'm too stressed out or tired to play games with gameplay, I find point and click/VNs relaxing to play too. I'm always coming back to the Ace Attorney series because of that
