It's a backhand grip. You'll mostly see people use that grip with a knife but it works with swords too, assuming they aren't too heavy

WW Link got his ass owned by Ganon and had his Triforce part stripped from him, along with Zelda. Ganon then released his own Triforce piece to complete the Triforce, only for it to get stolen away by Deus Ex Boatina. Link was only able to beat Ganon after Ganon lost that power.

BotW Link beat what seems to be at best a spirit of Ganon and not the full being. It had raw power, but very little of the intelligence and cunning the younger Ganon(s) were known for. Power without intelligence is just a rabid beast, which is what BotW Ganon essentially was.

Just because you wield limitless destructive power doesn't mean you can't fuck it up. As with most villains, Ganondorf is just very cocky and cockiness can lead to making oversights. You have to kinda realize that Triforce of Power is still limiting in the fact that it's user can still be harmed by godly/light weapons such as the Master Sword and Light Arrows as well as their own attacks directed back at them.

I like the idea that the triforce of courage is basically the game over screen. It's true power is letting link keep trying and pushing forward over and over. Link is armed with the knowledge of his previous life and can use that to keep pursuing his quest to kill ganon
