I don't care for fanbase/console-warring, but I just wanted to say I'm glad some developers are starting to make Breath of the Wild clones (there's also that game Ubisoft announced at E3), as it was a fantastic evolution of the open world genre.

Shame this game will be garbage on release.

Pick a game engine based on your knowledge of programming. Make a simple test game, some literal garbage demo where you control an object in an environment and put in some event flags and maybe other objects to interact with. Once you've done that and it doesn't crash or work in unintended ways, you can start designing your first REAL game demo. With like, an actual core mechanic that the design revolves around.

I actually played around in unreal but how do people do it? Do they start from some of the template projects or do it all from scratch? Knowing C++ won't help if I need to learn an entirely new API on top of that.

That depends on how much time you can commit to it I guess.
