In his early appearances he always had a different job and it seems he was only a plumber in Mario Bros. His role in SMB was that of unlikely fantasy hero I guess
It might have been NOA who initially ran with the whole plumber thing, the same as with him being from Brooklyn, but then Nintendo picked up on it at some point
