Fate/Stay Night is a story about heroes, and it's themes revolve around what it means to be a hero both on a personal level and from the eyes of society. This is done by summoning mythic heroes while exploring the mind of a main character who's ideology is steeped in an obsession with selflessness.
The main character develops as a person throughout the three routes which are like "difficulty levels" for his developing mind.
The Fate route introduces Shirou to legendary heroes while he fights to save others, even his Servant who wants to save him. The penultimate "boss" is an epic hero from the oldest myth who wishes to save the world from stagnation and destruction by reducing the population.
The UBW route has Shirou fight a future version of himself, who has experienced his entire future and afterlife and Shirou must come to terms with that by either giving up his impossible ideal or embracing the impossibility and stubbornly proceeding by keeping hope alive and doing whatever little help he can.
The HF route has Shirou faced with a choice that is impossible to make while still upholding his ideal of "saving everyone". Neither choice he makes will have a perfectly happy outcome. He learns he has to make exceptions, and decides he won't just throw away his ideal of becoming a hero who can save everyone just because of some unfair choices, and knows that stumbling is inevitable. The final "boss" is a mirror of himself, a man who can literally only feel alive and fulfilled by seeing other people suffer.
Fate/Zero doesn't have shit like this. It's a prequel story so it has no choice but to adhere to strict rules and set-up F/SN properly. In F/SN the cast is more focused to the main character and his group of allies, but when it does have an intermission about a side-character, it develops them in a meaty and fulfilling way, albeit quickly. F/Z splits it's cast's importance everywhere, and none of them truly reach the depth as in F/SN.

I should clarify since I kind of jumped in the middle here, I'm not the original user, I'm a different user who cannot see why people like F/SN. I think it's absolutely garbage with few redeeming qualities. However, while I won't defend Fate/Zero's pacing either, you're talking shit if you say it's worse than F/SN. F/SN is packed to the gills with useless filler that contributes nothing to the story or characters. Maybe this is a useless pissing contest but I cannot fathom how people enjoy Fate Stay Night when it's so terribly written, save Shirou's insanity. That's actually rather good, but it doesn't salvage the absolute mess of everything else. I just don't get it, what do you people enjoy?

It has a strong and pretty memorable soundtrack, it conveys its action very well for a VN of its time, the characters are memorable and the majority of them are enjoyable to read about. It's no high literature, but it presents the themes it wants to share clearly. Plus it's very quotable, especially counting the DEEN anime and the wonky mirror moon translation. Fate/Stay Night was required reading on Yea Forums to even participate in its most basic conversation for a solid decade and frankly still fucking should be.

Nah I go into things with an open mind, usually. I just read it and thought it was a poorly written story with a couple things I liked here and there. I only found out about the game's fanbase after the fact and was baffled. It's literally Stockholm Syndrome from people forcing themselves to play through a 60 hour VN with approximately 15% percent of it being worthwhile and engaging. Since a good majority of the VN is so fucking boring, people end up forgetting the shitty parts later on and only remember the memes and good moments. Hollow Axataria was way better and I found myself liking most of the cast when I found a good chunk of them either insufferable or boring in the original VN.

I'm not much a book reader but you can cut out a solid half, at least if not more, from almost all novels and the same message can be delivered effectively. You're expecting to get an anime's experience out of what is essentially an audiobook with anime character sprites to guide you through the action scenes.

I won't debate that it's not packed with useless garbage as this is my first time reading though I didn't mean, from my previous comment, that books always need to have messages. What I meant by that is, for novels that take more than a few hours to get through, there's always going to be content that is forgotten due to not being important. Acknowledging that there is always going to be filler is just part of reading them. And in the end if the good parts outweigh the boring and lame parts then the experience is good overall. So far that's how I feel, not sure how deep I am into the story but it's just after Saber's first fight with Rider. So we'll see. I mean, it took me a real long time to get through Umineko, another VN I chose to go with the original for, but it was pretty worth it because despite being longer than Dostoyevsky's War and Peace the fun parts left a lasting impression that made it worth the time. And I feel like FSN is not exactly that good but pretty close, so far at least.
tl;dr if the fun parts outweigh the boring parts then it's worth it and I think FSN does that just fine

Fine that much I'll give you, they could have crafted better situations to show how the characters are going through changes in their daily lives other than how differently they act during the "Shirou makes dinner" segments. I've acknowledged its weak moments, and yeah the VN loses points for it overall, but like passing a test even though some of your answers are hot garbage I'm still enjoying it overall. There's no reason to completely discard it just because those scenes suck. Hell, just hold ctrl and skip em.
