Are you prepared to commit? Are you ready for an extensive emotional roller coaster across three games? If so, then I recommend Muv Luv. Go in blind, kiss 100+ hours of your life away, and keep grinding. It's one of the best VNs I've ever ever.
Other good contenders are Steins;gate like someone else recommended and unironically Doki Doki and Katawa as babys first visual novel.
If you like horror, puzzle, mystery. Death Mark is tragically overlooked and really good.
Another would be 999 and VLR. Danganronpa if you like weeb stuff.

Steins;Gate is a great one that people will suggest to start out with. I've read a lot of VNs but it's still one of my favorites. The beginning is slow for some people but I never felt that way.
999 is a great transition into VNs as well. It has escape the room puzzles which I find really fun and a great story (as expected of a VN).
It's what got me into VNs.
