Partially this. In DS1 and DS2 the undead looked like your run of the mill malnourished person made out of brown-grayish rubber.
In DS3 they actually look like undead and are terrifying.

My last run was a mage and it was extremely easy. In fact, the only time i ever died or had trouble with them was when i aggroed two while trying to disable the ballista.

Pro tip just dash to the bonfire
