It's actually true in real life that a vibrating blade cuts easier, but firing off shells or whatever the fuck ammunition the gunblade uses would be a terrible way to get that result and would probably end up blowing the user's hands off instead. The High Frequency Blade from Metal Gear is a better way to do the same thing, they just wanted the trigger pull mini game or something.

Seifer's and Squall's also have totally different grips, and it looks like Seifer's is positioned to be used more like a rapier or fencing sabre while Squall's is more like a proper longsword, but I base this on absolutely nothing.
