Has there ever been a beat em up that doesn't have a Z axis and doesn't have braindead options? Are there any beat em ups that basically function like a fighting game? That would be nice. I want to like beat em ups because they are the most awesome looking games, but they are just so braindead like hack n slash games. I wanna string together huge combos and dunk on fools but not have to worry about a Z-axis or a 3D camera.

You’d be better of playing J-action games imho, like Devil May Cry and God Hand. Yakuza plays like a beat ’em up with fighting game mechanics, but the gameplay isn’t strictly about combat. These are all 3d games, though.
