RE story was not important until RE7 because story is important in modern games, the game was a soft reboot, yeah it does contain events a references from previous games but it doesn't mean that the old games are canon.
Those event are the starting point for the new canon, RE2 came out and then the old RE2 isn't canon anymore and so on every new REmake will rewrite an old game.
I can't find an old thread about this but I said it long ago, almost when RE2make was released.

The stories of the RE series are always filled with plotholes and sometimes borderline retarded, but i really love the whole "pharmaceutical company runs then entire town from the shadows and creates supersoldier in secret laboratories in the woods" conspiracy narrative, it's so b-horror movie cliche but the game barely scrap the story and instead the player mostly interacts with atmospheric environmental art and cool setpieces. It really was after CV that things started falling apart that by RE4 the director didn't even care about having story anymore, the game even has a midget that dresses like Napoleon in it.

All RE games previous to RE7 have Big Events that means something big happened within RE lore and Capcom will repect that. Well they did it in RE7 referencing old game Events.
The Events are canon and they cannot be removed for example the Raccoon City incident BUT what happened in those games related with characters and the Events CAN be rewrited. I mean what matter is how the Event ends not what happened before.
So RE7 it is the continuation of RE6 and all games are kind of canon but Capcom will Remake the most important games and those Remakes will overwrite the old games.
What is the most important Event in RE2? The G virus, Umbrella Laboratory and how Leon meets Claire Sherry that is the Event but how it happened was rewrited in the Remake.
Next step is Remake RE3 but also RE8. Also as Capcom sayed after RE2 Remake launch they want to Remake the REmake. So the Mansion Event will happen again with some changes my thoughts are Capcom will merge RE1 and RE0 in 1 REmake.

In the remake both defeat William 1, both defeat William 2, both defeat William 3, and Annette dies after shooting Ada and also dies after curing Sherry. As much as some of the puzzles may not make sense in the original, it still fits together better than the remake.

It's just my opinion but I've always hated RE3. Dynamic difficulty that changes and randomizes item pickups with no regard for level design and balance. Main enemy that has a basic attack that causes an inescapable stunlock. Contextual actions where you press fire to push and dodge and it always causes you to dodge when you're trying to shoot and shoot when you're trying to dodge. Boss fights in hallways against monsters that are the width of said hallways. The game also started the trend of watered down resource management by letting the player craft ammo according to their needs rather than relying on exploration to find what they need. Worst of all it added Mercenaries, a story-irrelevant arcade bonus mode that eventually evolved into a goddamn kill-combo score attack shit that negatively influenced the design of so-called Resident Evil games in the future, making RE6 into a full-blown action shooter.
