It's less that gamefreak is lazy and more that the Switch has about 4GB of memory that has to be split between CPU and GPU, so if you want anything at all to look good you have to cut file size anywhere you can. Clearly the trees were a lower priority in terms of texture/model memory than the PC and pokemon

Everybody wanted LGBT to be a side spin-off thing with only Kanto dex and was promised that the next game will be for "real" fans, so all Pokemon were expected. Turned out LGBT was a soft reboot of the series and said "real" fans are the ones who endured it and somehow want more.
Why would any of those pokemon be there is my biggest problem. There isn't anything for them to eat, there isn't anything for them to do, and I don't see why that giant field would be their natural habitat.

Don't get me wrong, Pokemon Sword/Shield doesn't look like a great utilization of the Switch, DQ11 kicks the shit out of it with relatively the same goals, but making less consequential objects in the world use lower-res textures or a more sensitive LoD so you have more memory for character models is an extremely common technique.

3DS, a handheld from 8 years ago, dated on release, "handled" 800 Pokemon of the exact same fidelity SS has. This is not Switch's fault. We know no real reason why Game Freak would limit the roster on the stronger hardware when the general look of the game clearly hasn't improved beyond bumping the resolution and a new shader. Everything points we have seen so far towards "higher quality animations" being PR bullshit.

Let's Go was my tipping point. Despite owning one of every main line game and every third version for every gen up to gen 8 I didn't buy LGPE and said I'll just wait for the game for "our long term fans" or however they worded it. Unfortunately SS isn't that game so I guess I'm going to keep waiting. I only play the pokemon games for the competitive battling. Despite every game after BW2 going downhill in the single player, the pvp has been improving with every game. Cutting 2/3 of the dex, as well as features like z moves and mega evolutions, will be a SHARP decline in the quality of the pvp and if both the single player and the pvp are going downhill there's really no reason to play the games.

You're right, 90% of people, and that's generously high, don't care about filling out the National Dex, except maybe for rewards Game Freak put there. And most peple don't use 98% of the pokemon. But, did you also know that you CAN'T catch every pokemon up to that point in the previous games as well? Yeah, you couldn't, you always had to import pokemon from previous games or have someone else trade with you. Not being able to catch them all over again aren't people are mad about. The issue is that every pokemon is someone's favorite pokemon. Every single one. When you start cutting, you are taking out someone's favorite. And while before, you could always bring them back with a transfer, now it is physically impossible to bring your favorite with you to the new game. The biggest regional Pokedex so far, which is the amount of pokemon catchable in-game, barring some special methods, has been Ultra Sun and Ultra Moon, with 403, out of the 809 pokemon that existed up to that point. Let's say we have a similar ratio for the new game, which is confirmed to be giving us 1000+ pokemon, including forms, and say we have 500-600 pokemon. Even if that was all old pokemon, that would be cutting out at least quarter of the existing pokemon, and when you add new pokemon to the mix, that could lead to even more. Do you seriously believe the number of pokemon no one cares about is at least 25% of the existing pokemon? It shows a critical lack of understanding of what makes the series popular. POKEMON are what makes the series so well loved, and cutting them for no apparent gain is one of the dumbest moves you can make. Also, they're going to be milking money from people with Pokemon Home. Want to keep all your Pokemon in one place, but have some that can't be transferred to the new game? Hope you're ready to pay the inevitable monthly fee to keep them around until they get to be in another game.
